1 1/2 ounce(s) Pisco (Peruvian Brandy)
1 ounce(s) sugar plum reduction
1/4 ounce(s) lemon juice
For the sugar plum reduction:
10 plums, quartered
3/4 cup(s) lemon juice
1/2 cup(s) water
1 cup(s) demerara sugar
Combine all ingredients in a martini shaker filled with ice and shake vigorously.
Strain into a small sniffer or pony glass with the rim coated with festive-colored sugar.
Garnish with a lemon twist.
For the sugar plum reduction:
Place all ingredients in a pot over medium heat, stirring occasionally, until it’s reduced by half. Strain through a fine metal strainer and discard solids.
