Potato Wine


· 4 lb’s of Potatoes
· Juice 1 lemon
· Juice 1 orange
· ½ oz of wine yeast
· 2 lb of sugar
· 4 oz raisins
· 8 oz pearl barley
· 1½ oz ginger
· 6 pints of boiling water
· Fermentation jar and air lock
· 5 gallon bin with a tight lid

Wash and slice the Potatoes, do not peel.
Place potatoes in a 5 gallon bin.
Pour 6 pints of boiling water over them and leave set for 4 days to infuse

Measure the liquid and add sugar, raisins, pearl barley, lemon & orange juice and yeast to the fermentation jar.
Place air lock and leave in a warm place - 65 to 75 F, to ferment. 
When the bubbling as stopped, the wine should then be stirred.
Leave to settle for 3 or 4 days.

Strain the liquid into a cask, making sure you fill it to the brim, cork and leave for 6 months to mature.
Pour into bottles, cork and leave in a cool dark place for a few months or more.

* After a few months it should be ready to drink.
